Valentines recipe spotlight
Give this recipe a try, make it for your soul mate or yourself this weekend, or anytime!
INGREDIENTS
1 Egg
1/2 cup Unsweetened Almond Milk
2 tbsps Maple Syrup (more for topping)
1/2 tsp Vanilla Extract
1 cup Almond Flour
2 2/3 tbsps Arrowroot Powder
1/2 tsp Cinnamon
1 tsp Baking Powder
1/2 cup Strawberries (these will be blended, keep some for topping if you’d like)
1 1/2 tsps Coconut Oil (divided)
1 tbsp Rainbow Sprinkles (pink & red)
1 cup Cool Whip
DIRECTIONS
In a food processor, add the eggs, almond milk, maple syrup, and vanilla extract. Process until well-combined.
In a separate bowl, whisk together the almond flour, arrowroot powder, cinnamon and baking powder.
In a blender or food processor blend the strawberries until they become a sauce consistency.
Slowly combine the dry ingredients into the wet ingredients and process until well combined. (leaving out the strawberry sauce)
Coat the waffle maker with some coconut oil and add enough batter to cover the bottom of your maker.
Take some strawberry sauce and drizzle through the waffle to make a marble pattern.
Cook the waffles for about 5 minutes or until golden brown. Repeat the process until all the batter is cooked.
To serve, top with whipped cream, sprinkles and maple syrup, if using. Enjoy!
